Instructions
- Heat 1 teaspoon of olive oil in a large skillet over medium-high heat. Add the ground turkey Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set the sausage aside. While the sausage cooks, prepare the brown rice.
- For the rice, combine 1 1/2 cups quick-cook brown rice, 2 1/2 cups water, 1/2 teaspoon kosher salt, and 1/2 of the minced garlic in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer according to package directions, typically 10-15 minutes, or until water is absorbed and rice is tender. Keep warm.
- Add the remaining 1 teaspoon of olive oil to the same skillet over medium heat. Add the chopped yellow onion and diced sweet potato. Sauté for 5-7 minutes, stirring occasionally, until the onion is softened and the sweet potato begins to tenderize.
- Add the red bell pepper, green bell pepper, and remaining minced garlic to the skillet. Cook for another 3-5 minutes, until the bell peppers are slightly tender-crisp.

Add the dried Italian seasoning, red pepper flakes (if using), 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Pour in the chicken broth and stir to combine. Simmer for 2-3 minutes, allowing the flavors to meld.

Notes
Leftovers store well in an airtight container in the refrigerator for up to 3 days. The sweet potato will continue to soften upon reheating, but the flavors will remain robust. For convenience, you can prep all the chopping the night before.
