Instructions

  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 pound ground turkey Italian sausage, breaking it up with a spoon, and cook until browned, about 5 to 7 minutes. Drain any excess fat.
  2. While the sausage cooks, bring a large pot of salted water to a boil for the penne pasta. Cook 8 ounces penne pasta according to package directions until al dente.
  3. Add 1 medium diced yellow onion, 1 red bell pepper, and 1 green bell pepper to the skillet with the sausage. Sauté for 5 minutes until the vegetables begin to soften.
  4. Stir in 3 minced cloves garlic, 1 can diced tomatoes (undrained), 1/2 cup chicken broth, 1 teaspoon dried Italian seasoning, 1/2 teaspoon red pepper flakes (if using), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring the mixture to a simmer.
  5. Reduce heat to medium-low, cover, and simmer for 5 minutes to allow the flavors to meld. Once the pasta is cooked, drain it and add it directly to the skillet, tossing to combine with the sausage and vegetables.
  6. Serve hot, garnished with fresh parsley if desired (not included in ingredients but recommended for garnish).

Notes

Leftovers reheat wonderfully in the microwave or on the stovetop. If you prefer a richer sauce, stir in a tablespoon of cream cheese or a splash of heavy cream at the end.
