Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 pound ground turkey Italian sausage, breaking it up with a spoon, and cook until browned, about 5 to 7 minutes. Drain any excess fat.
- While the sausage cooks, bring a large pot of salted water to a boil for the penne pasta. Cook 8 ounces penne pasta according to package directions until al dente.
- Add 1 medium diced yellow onion, 1 red bell pepper, and 1 green bell pepper to the skillet with the sausage. Sauté for 5 minutes until the vegetables begin to soften.
- Stir in 3 minced cloves garlic, 1 can diced tomatoes (undrained), 1/2 cup chicken broth, 1 teaspoon dried Italian seasoning, 1/2 teaspoon red pepper flakes (if using), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring the mixture to a simmer.
- Reduce heat to medium-low, cover, and simmer for 5 minutes to allow the flavors to meld. Once the pasta is cooked, drain it and add it directly to the skillet, tossing to combine with the sausage and vegetables.
- Serve hot, garnished with fresh parsley if desired (not included in ingredients but recommended for garnish).
