Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 yellow onion (small, finely diced)
- 2 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 12 ounce green beans (trimmed)
- 1 cup shredded carrots (shredded)
- 0.25 cup gluten-free tamari
- 2 tablespoon vegetable broth
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 0.25 teaspoon black pepper
- 2 cup white rice (uncooked)
- 4 cup water
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a small bowl, whisk together the gluten-free tamari, vegetable broth, rice vinegar, cornstarch, and black pepper. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- While the turkey cooks, prepare the white rice. In a medium saucepan, combine 2 cups white rice and 4 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.
- Add the finely diced yellow onion, minced garlic, and grated fresh ginger to the skillet with the turkey. Sauté for 2-3 minutes until fragrant.
- Stir in the green beans and shredded carrots. Cook for 3-4 minutes, or until the vegetables are tender-crisp.
- Pour the prepared sauce mixture into the skillet and stir well to coat all ingredients. Cook for 1-2 minutes, or until the sauce thickens slightly.
- Fluff the cooked rice with a fork. Serve the turkey and green bean stir-fry immediately over the steamed rice. Garnish with sesame seeds if desired.
Notes
For added crunch, you can toast the sesame seeds in a dry pan for a few minutes before garnishing.
