Instructions

  1. In a small bowl, whisk together the gluten-free tamari, vegetable broth, rice vinegar, cornstarch, and black pepper. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  3. While the turkey cooks, prepare the white rice. In a medium saucepan, combine 2 cups white rice and 4 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.
  4. Add the finely diced yellow onion, minced garlic, and grated fresh ginger to the skillet with the turkey. Sauté for 2-3 minutes until fragrant.
  5. Stir in the green beans and shredded carrots. Cook for 3-4 minutes, or until the vegetables are tender-crisp.
  6. Pour the prepared sauce mixture into the skillet and stir well to coat all ingredients. Cook for 1-2 minutes, or until the sauce thickens slightly.
  7. Fluff the cooked rice with a fork. Serve the turkey and green bean stir-fry immediately over the steamed rice. Garnish with sesame seeds if desired.

Notes

For added crunch, you can toast the sesame seeds in a dry pan for a few minutes before garnishing.
