Turkey Chili with Loaded Greens

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add lean ground turkey and cook, breaking it apart, until browned. Drain any excess fat.
  2. Add chopped yellow onion, chopped red bell pepper, and minced garlic to the pot. Cook for 5-7 minutes, until vegetables are softened.
  3. Stir in diced tomatoes (undrained), chicken broth, chili powder, ground cumin, salt, and black pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes, allowing flavors to meld.
  4. Serve the turkey chili hot over a bed of mixed greens or chopped spinach. Top with a dollop of plain non-fat Greek yogurt and a sprinkle of shredded sharp cheddar cheese, if desired.

Notes

For an even richer flavor, simmer the chili for a longer duration, up to 30 minutes. This chili makes excellent leftovers and can be frozen for later.
