- 1 pound ground turkey (93% lean or higher)
- 0.5 yellow onion (medium, chopped)
- 1 red bell pepper (chopped)
- 2 clove garlic (minced)
- 1 can diced tomatoes (14.5 ounce, undrained)
- 1.5 cup chicken broth
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 5 ounce mixed greens
- 0.5 cup plain Greek yogurt (non-fat, for topping)
- 0.25 cup sharp cheddar cheese (shredded, for topping)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add lean ground turkey and cook, breaking it apart, until browned. Drain any excess fat.
- Add chopped yellow onion, chopped red bell pepper, and minced garlic to the pot. Cook for 5-7 minutes, until vegetables are softened.
- Stir in diced tomatoes (undrained), chicken broth, chili powder, ground cumin, salt, and black pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes, allowing flavors to meld.
- Serve the turkey chili hot over a bed of mixed greens or chopped spinach. Top with a dollop of plain non-fat Greek yogurt and a sprinkle of shredded sharp cheddar cheese, if desired.
Notes
For an even richer flavor, simmer the chili for a longer duration, up to 30 minutes. This chili makes excellent leftovers and can be frozen for later.
