Ingredients
- 14 ounce lean ground turkey
- 1 tablespoon olive oil
- 1 yellow onion (medium, finely diced)
- 2 clove garlic (minced)
- 28 ounce crushed tomatoes (no salt added)
- 0.5 cup chicken broth (low sodium)
- 1 teaspoon dried oregano
- 0.5 teaspoon dried basil
- 0.25 teaspoon black pepper
- 4 zucchinis (medium, spiralized or peeled into ribbons)
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 finely diced yellow onion and cook until softened, about 3-4 minutes.
- Add 14 ounces lean ground turkey to the skillet. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Stir in 2 cloves minced garlic and cook for 1 minute until fragrant.
- Pour in 1 can crushed tomatoes and 1/2 cup low sodium chicken broth. Stir in 1 teaspoon dried oregano, 1/2 teaspoon dried basil, and 1/4 teaspoon black pepper. Bring the sauce to a simmer, then reduce heat to low, cover, and let it gently simmer for 10-12 minutes, allowing the flavors to meld.
- While the sauce simmers, prepare your zucchini noodles. In a separate skillet or microwave, briefly cook the 4 medium spiralized zucchini noodles for 2-3 minutes, just until tender-crisp. Do not overcook.
- Serve the turkey bolognese generously over the zucchini noodles.
Notes
To avoid soggy zucchini noodles, cook them briefly and add to the sauce just before serving. Leftover sauce can be stored separately from noodles.
