Turkey Bolognese Style Pasta

  1. Bring a large pot of water to a rolling boil. Add 8 ounces whole wheat spaghetti and cook according to package directions until al dente, about 8-10 minutes. Drain well.
  2. While pasta cooks, heat 1 tablespoon olive oil in a large skillet or pot over medium-high heat. Add 1 pound lean ground turkey and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add 1 chopped yellow onion, 1 chopped red bell pepper, and 2 minced cloves garlic to the skillet. Cook for 5 minutes, stirring, until vegetables soften and garlic is fragrant.
  4. Stir in 1 can crushed tomatoes (undrained), 1 1/2 teaspoons dried basil, 1 teaspoon dried oregano, and 1/2 teaspoon black pepper. Bring the sauce to a simmer, then reduce heat to low and cook for 5-7 minutes, allowing flavors to meld. Taste and add 1/4 teaspoon salt if desired, to taste.
  5. Serve the turkey bolognese sauce over the cooked whole wheat spaghetti.

Notes

If you like a thicker sauce, let it simmer uncovered for a few extra minutes to reduce. This makes wonderful leftovers and can be easily portioned for meal prep.
