Ingredients
- 1 teaspoon olive oil
- 12 ounce ground turkey (lean)
- 1 teaspoon chili powder (salt-free)
- 0.5 teaspoon cumin
- 0.25 teaspoon garlic powder
- 0.25 teaspoon onion powder
- 1.5 cup black beans (rinsed and drained)
- 1.5 cup frozen corn (thawed)
- 0.5 cup fresh cilantro (chopped)
- 2 tablespoon lime juice
- 1 head butter lettuce (separated into leaves)
Instructions
- Heat 1 teaspoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook for 7-9 minutes, breaking it apart with a spoon, until browned. Drain any excess fat.
- Stir in the chili powder, cumin, garlic powder, and onion powder. Cook for 1 minute more until fragrant.
- In a medium bowl, combine the rinsed black beans, thawed corn, chopped fresh cilantro, and lime juice. Mix well to create a salsa.
- Serve the seasoned ground turkey and black bean salsa in the butter lettuce cups.
Notes
To prep ahead, cook the ground turkey and prepare the salsa separately. Store both in airtight containers in the refrigerator. Assemble the wraps just before serving to keep the lettuce crisp.
