  1. Cook 2 cups white rice according to package directions while preparing the other ingredients. Typically, combine with 4 cups water, bring to a boil, then cover and simmer until water is absorbed.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and cook, breaking it apart, until no longer pink, about 5 minutes. Drain any excess fat.
  3. Stir in 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt to the ground turkey. Cook for 1 minute, until fragrant.
  4. Add 1 can rinsed black beans and 1 cup frozen corn to the skillet. Cook for 3-5 minutes, stirring occasionally, until heated through.
  5. Remove from heat. Stir in 1/4 cup chopped fresh cilantro and 2 tablespoons lime juice.
  6. Divide the cooked rice among serving bowls. Top with the turkey and black bean mixture. Serve with optional 1/2 cup salsa and 1/4 cup shredded cheddar cheese.

Notes

These bowls are excellent for meal prep; simply store components separately and assemble when ready to eat. A squeeze of fresh lime juice just before serving brightens all the flavors.
