  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1/2 pound of ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add 1/2 chopped yellow onion and 1 chopped red bell pepper to the skillet. Cook, stirring occasionally, until softened, about 5 minutes.
  3. Stir in 1 minced clove of garlic, 1 teaspoon of chili powder, 1/2 teaspoon of ground cumin, and 1/4 teaspoon of salt. Cook for 1 minute until fragrant.
  4. Stir in 1 can of rinsed and drained black beans, 1/2 cup of frozen corn, and 1/2 cup of tomato sauce. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
  5. While the skillet simmers, prepare the microwaveable brown rice according to package directions, usually 90 seconds to 2 minutes.
  6. Serve the turkey-bean skillet over the brown rice. Garnish with chopped fresh cilantro, if desired.

Notes

For extra zest, a squeeze of lime juice or a spoonful of your favorite salsa can be added to the skillet before serving.
