Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 0.5 yellow onion (chopped)
- 8 ounce mushrooms (sliced)
- 2 clove garlic (minced)
- 0.5 cup wild rice blend (uncooked)
- 2 cup chicken broth
- 0.5 teaspoon dried thyme
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 5 ounce fresh spinach
Instructions
- Heat 1 tablespoon olive oil in a large skillet with a lid over medium-high heat. Add 1 pound ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add 1/2 chopped yellow onion and 8 ounces sliced mushrooms to the skillet. Sauté for 5-7 minutes until vegetables soften.
- Stir in 2 minced garlic cloves, 1/2 cup uncooked wild rice blend, 2 cups chicken broth, 1/2 teaspoon dried thyme, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer.
- Reduce heat to low, cover, and cook for 15-20 minutes, or until the wild rice is tender and most of the liquid is absorbed. Stir occasionally.
- Stir in 5 ounces fresh spinach until wilted. Serve hot.
Notes
If using pre-cooked wild rice, reduce chicken broth to 1 cup and simmer for only 5-10 minutes.
