  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 finely diced yellow onion and cook until softened, about 3-4 minutes.
  2. Add 14 ounces lean ground turkey to the skillet. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Stir in 2 cloves minced garlic and cook for 1 minute until fragrant.
  4. Add 1 can drained and rinsed cannellini beans, 1 can diced tomatoes, 1/2 cup low sodium chicken broth, 1 teaspoon dried oregano, 1/2 teaspoon dried basil, and 1/4 teaspoon black pepper to the skillet. Bring the mixture to a simmer.
  5. Stir in 5 ounces fresh spinach and cook until wilted, about 2-3 minutes. Taste and adjust seasonings if necessary, ensuring to maintain low sodium.
  6. Serve hot.
