- 15 ounce cannellini beans (no salt added, drained and rinsed)

- 0.5 cup chicken broth (low sodium)
- 1 teaspoon dried oregano
- 0.5 teaspoon dried basil
- 0.25 teaspoon black pepper
- 5 ounce fresh spinach (roughly chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 finely diced yellow onion and cook until softened, about 3-4 minutes.
- Add 14 ounces lean ground turkey to the skillet. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Stir in 2 cloves minced garlic and cook for 1 minute until fragrant.
- Add 1 can drained and rinsed cannellini beans, 1 can diced tomatoes, 1/2 cup low sodium chicken broth, 1 teaspoon dried oregano, 1/2 teaspoon dried basil, and 1/4 teaspoon black pepper to the skillet. Bring the mixture to a simmer.
- Stir in 5 ounces fresh spinach and cook until wilted, about 2-3 minutes. Taste and adjust seasonings if necessary, ensuring to maintain low sodium.
- Serve hot.
