Ingredients
- 0.5 pound ground turkey (93% lean)
- 1 tablespoon garlic-infused olive oil
- 1 red bell pepper (medium, finely diced)
- 2 cup baby spinach (chopped)
- 0.25 cup scallion greens (green parts only, thinly sliced)
- 0.33 cup quinoa (dry, rinsed)
- 2 tablespoon ground flaxseed
- 1 cup liquid egg whites
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (ground)
Instructions
- Preheat oven to 375 degrees F and lightly grease an 8x8-inch baking dish.
- Combine 1/3 cup dry quinoa with 2/3 cup water in a small saucepan, bring to a boil, cover, reduce heat to low, and simmer for 12 minutes until water is absorbed.
- Heat 1 tablespoon garlic-infused olive oil in a skillet over medium heat. Add 1/2 pound ground turkey and 1 medium diced red bell pepper, cooking for 6 minutes until meat is browned and cooked through.
- Stir in 2 cups chopped baby spinach and 1/4 cup scallion greens, cooking for 1 minute until spinach is wilted, then remove from heat.
- In a large bowl, whisk 1 cup liquid egg whites with 2 tablespoons ground flaxseed, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Fold the cooked quinoa and turkey vegetable mixture into the egg white mixture, then pour into the prepared baking dish.
- Bake at 375 degrees F for 22 minutes until set in the center and golden around the edges.
