Instructions

- While rice cooks, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the 14 ounces lean ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Add 2 cloves minced garlic, 1/2 teaspoon onion powder, and 1/4 teaspoon ground ginger to the skillet with the turkey. Sauté for 1 minute until fragrant.
- Stir in 2 cups broccoli florets. Cook for 3-5 minutes, stirring occasionally, until the broccoli is tender-crisp.
- In a small bowl, whisk together 2 tablespoons coconut aminos, 1 tablespoon rice vinegar, and 1/4 teaspoon black pepper. Pour the sauce over the turkey and broccoli mixture in the skillet. Toss to coat and cook for 1-2 minutes until the sauce slightly thickens.
