Instructions

  1. Cook the brown rice: Combine 1 cup brown rice and 1 1/2 cups water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until water is absorbed and rice is tender. (Note: If using microwaveable brown rice, follow package directions for quick preparation).
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the 14 ounces lean ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add 2 cloves minced garlic, 1/2 teaspoon onion powder, and 1/4 teaspoon ground ginger to the skillet with the turkey. Sauté for 1 minute until fragrant.
  4. Stir in 2 cups broccoli florets. Cook for 3-5 minutes, stirring occasionally, until the broccoli is tender-crisp.
  5. In a small bowl, whisk together 2 tablespoons coconut aminos, 1 tablespoon rice vinegar, and 1/4 teaspoon black pepper. Pour the sauce over the turkey and broccoli mixture in the skillet. Toss to coat and cook for 1-2 minutes until the sauce slightly thickens.
  6. Serve the turkey and broccoli stir-fry immediately over the cooked brown rice.
