  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add diced yellow onion and minced garlic to the skillet. Cook for 3-4 minutes until the onion softens.
  3. Stir in the dried oregano, paprika, and black pepper. Cook for 1 minute until fragrant.
  4. Add quick-cook brown rice and chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes, or until most of the liquid is absorbed and rice is nearly tender.
  5. Stir in frozen broccoli florets and salt. Cover and continue to cook for another 5-7 minutes, or until broccoli is tender-crisp and rice is fully cooked.
  6. Remove from heat. Sprinkle shredded cheddar cheese over the top, cover again for 2-3 minutes to allow cheese to melt. Serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop, adding a splash of broth if needed.
