Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 teaspoon dried oregano
- 0.5 teaspoon paprika
- 0.25 teaspoon black pepper
- 1 cup quick-cook brown rice
- 2 cup chicken broth
- 12 ounce frozen broccoli florets
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add diced yellow onion and minced garlic to the skillet. Cook for 3-4 minutes until the onion softens.
- Stir in the dried oregano, paprika, and black pepper. Cook for 1 minute until fragrant.
- Add quick-cook brown rice and chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes, or until most of the liquid is absorbed and rice is nearly tender.
- Stir in frozen broccoli florets and salt. Cover and continue to cook for another 5-7 minutes, or until broccoli is tender-crisp and rice is fully cooked.
- Remove from heat. Sprinkle shredded cheddar cheese over the top, cover again for 2-3 minutes to allow cheese to melt. Serve warm.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop, adding a splash of broth if needed.
