Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1 pound of ground turkey and cook until browned, breaking it into crumbles, about 6-8 minutes.
  2. Drain any excess fat. Stir in 1 teaspoon of chili powder, 1/2 teaspoon of ground cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 teaspoon of salt. Cook for 1 minute until fragrant.
  3. Add 1/4 cup of water and 1 (15 ounce) can of rinsed and drained black beans to the skillet. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to meld. Remove from heat.
  4. To assemble each tostada, spread a thin layer of the ground turkey and black bean mixture onto a flat corn tostada shell. Top with shredded Monterey Jack cheese.
  5. Serve immediately with a side of mixed greens or Romaine lettuce. Offer 1 cup of salsa, 1/2 cup of sour cream, and 1/4 cup of chopped fresh cilantro (if using) for topping.

Notes

You can warm the tostada shells briefly in the oven at 300°F for 5 minutes for extra crispness, but it's not strictly necessary. Customize toppings with avocado or pickled jalapeños.
