Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 yellow onion (chopped)
- 1 green bell pepper (chopped)
- 1 can black beans (rinsed and drained)
- 2 tablespoon taco seasoning
- 0.5 cup water
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 8 flour tortillas (small)
- 2 cup green cabbage (shredded)
- 0.25 cup fresh cilantro (chopped)
- 2 tablespoon lime juice
- 6 ounce tortilla chips
- 1 cup salsa
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook, breaking up the meat with a spoon, until no longer pink, about 5-7 minutes. Drain any excess fat.
- Add the chopped yellow onion and green bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in the rinsed and drained black beans, taco seasoning, and 1/2 cup water. Bring to a simmer, then reduce heat to low and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened and flavors have blended. Season with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper, or to taste.
- While the filling cooks, prepare the slaw: in a small bowl, combine shredded green cabbage, chopped fresh cilantro, and lime juice. Toss to coat.
- Warm the tortillas according to package directions.
- Serve the turkey and black bean filling in warm tortillas, topped with fresh cabbage slaw. Accompany with tortilla chips and salsa.
Notes
For a little extra crunch, you can toast the tortillas lightly in a dry skillet before serving. Leftovers can be stored for 3-4 days and are great for quick lunches.
