  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook, breaking up the meat with a spoon, until no longer pink, about 5-7 minutes. Drain any excess fat.
  2. Add the chopped yellow onion and green bell pepper to the skillet. Cook until softened, about 5 minutes.
  3. Stir in the rinsed and drained black beans, taco seasoning, and 1/2 cup water. Bring to a simmer, then reduce heat to low and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened and flavors have blended. Season with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper, or to taste.
  4. While the filling cooks, prepare the slaw: in a small bowl, combine shredded green cabbage, chopped fresh cilantro, and lime juice. Toss to coat.
  5. Warm the tortillas according to package directions.
  6. Serve the turkey and black bean filling in warm tortillas, topped with fresh cabbage slaw. Accompany with tortilla chips and salsa.

Notes

For a little extra crunch, you can toast the tortillas lightly in a dry skillet before serving. Leftovers can be stored for 3-4 days and are great for quick lunches.
