Ingredients

- 1.5 pound ground turkey (lean)
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 bell pepper (large, diced)

- 0.5 cup vegetable broth
- 1 can black beans (rinsed and drained)

- 12 tortillas
- 1 cup salsa (for serving)

Instructions
- Heat the olive oil in a large skillet or non-stick pan over medium-high heat. Add the lean ground turkey and cook, breaking it apart with a spoon, until browned, about 5 to 7 minutes.
- Drain any excess fat. Add the diced yellow onion and minced garlic to the skillet and cook until softened, about 3 to 4 minutes.
- Stir in the diced bell pepper, chili powder, ground cumin, and dried oregano. Cook for another 2 minutes until fragrant.
- Pour in the vegetable broth and bring to a simmer. Add the rinsed and drained black beans. Season with salt and black pepper to taste. Let simmer for 5 minutes, allowing the flavors to meld.
- Warm the tortillas according to package directions while the turkey mixture simmers.
- Serve the turkey and black bean filling in warm tortillas, topped with salsa and fresh cilantro, if desired.
