  1. Heat the olive oil in a large skillet or non-stick pan over medium-high heat. Add the lean ground turkey and cook, breaking it apart with a spoon, until browned, about 5 to 7 minutes.
  2. Drain any excess fat. Add the diced yellow onion and minced garlic to the skillet and cook until softened, about 3 to 4 minutes.
  3. Stir in the diced bell pepper, chili powder, ground cumin, and dried oregano. Cook for another 2 minutes until fragrant.
  4. Pour in the vegetable broth and bring to a simmer. Add the rinsed and drained black beans. Season with salt and black pepper to taste. Let simmer for 5 minutes, allowing the flavors to meld.
  5. Warm the tortillas according to package directions while the turkey mixture simmers.
  6. Serve the turkey and black bean filling in warm tortillas, topped with salsa and fresh cilantro, if desired.

Notes
