  1. Heat olive oil in a large skillet over medium-high heat. Add chopped yellow onion and cook for 3-4 minutes until softened.
  2. Add ground turkey to the skillet and break it apart with a spoon. Cook for 5-7 minutes, until browned, then drain any excess fat.
  3. Stir in minced garlic and taco seasoning. Cook for 1 minute until fragrant.
  4. Add rinsed and drained black beans and water to the skillet. Bring to a simmer and cook for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  5. To assemble the taco bowls, divide the cooked white rice among four serving bowls.
  6. Top the rice with the turkey and black bean mixture. Then add your desired toppings: shredded Monterey Jack cheese, shredded lettuce, salsa, sour cream (if using), and chopped fresh cilantro (if using).

Notes

For a little extra kick, a squeeze of lime juice or a few slices of jalapeño can be added before serving. Prepare cooked rice ahead of time for even quicker assembly.
