Ingredients
- 1 pound ground turkey (93% lean)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 package taco seasoning
- 1 can black beans (rinsed and drained)
- 0.5 cup water
- 2 cup white rice (cooked)
- 0.5 cup Monterey Jack cheese (shredded)
- 1 cup lettuce (shredded)
- 0.25 cup salsa
- 0.25 cup sour cream
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chopped yellow onion and cook for 3-4 minutes until softened.
- Add ground turkey to the skillet and break it apart with a spoon. Cook for 5-7 minutes, until browned, then drain any excess fat.
- Stir in minced garlic and taco seasoning. Cook for 1 minute until fragrant.
- Add rinsed and drained black beans and water to the skillet. Bring to a simmer and cook for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- To assemble the taco bowls, divide the cooked white rice among four serving bowls.
- Top the rice with the turkey and black bean mixture. Then add your desired toppings: shredded Monterey Jack cheese, shredded lettuce, salsa, sour cream (if using), and chopped fresh cilantro (if using).
Notes
For a little extra kick, a squeeze of lime juice or a few slices of jalapeño can be added before serving. Prepare cooked rice ahead of time for even quicker assembly.
