  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground turkey and diced yellow onion. Cook, breaking up the turkey with a spoon, until the turkey is browned and the onion is softened, about 6-8 minutes.
  2. Stir in the chili powder, ground cumin, garlic powder, and 1/4 teaspoon black pepper. Cook for 1 minute more, until fragrant.
  3. Add the rinsed black beans and frozen corn to the skillet. Cook for 3-5 minutes, stirring occasionally, until heated through.
  4. While the turkey mixture cooks, prepare your brown rice according to package directions. You can also use pre-cooked microwaveable brown rice for speed.
  5. In a small bowl, combine the finely diced red bell pepper, fresh cilantro, and lime juice.
  6. To assemble, divide the cooked brown rice among 5 bowls. Top with the turkey and black bean mixture. Garnish with the fresh red bell pepper mixture and serve.

Notes

To make this even faster, use microwaveable pre-cooked brown rice. Leftovers are excellent for lunch the next day.
