Turkey and Beef Meatballs with Whole-Wheat Spaghetti

Ingredients
- 8 ounce whole-wheat spaghetti (dry)
- 2 cup chunky tomato sauce
- 1 tablespoon fresh basil (rinsed, dried, chopped)
- 4 teaspoon parmesan cheese (grated)
- 6 ounce ground turkey (99 percent lean)
- 0.5 cup whole-wheat breadcrumbs
- 4 tablespoon evaporated milk (fat-free)
- 2 tablespoon parmesan cheese (grated)
- 1 tablespoon fresh chives (rinsed, dried, chopped)
- 1 tablespoon fresh parsley (rinsed, dried, chopped)
- 6 ounce ground beef (93 percent lean)
Instructions
- Preheat oven to 400 °F.
- In a 4-quart saucepan, bring 3 quarts of water to a boil over high heat. Add whole-wheat spaghetti, and cook according to package directions. Drain.
- Meanwhile, combine ingredients for the turkey and beef meatballs in separate bowls, and mix well.
- Measure 1½ tablespoons of turkey mixture and roll in hand to form a ball; then place the meatball on a nonstick baking sheet. Repeat, and follow same instruction for beef mixture, until eight turkey and eight beef meatballs are made.
- Bake meatballs on a nonstick baking sheet for 10 minutes (to a minimal internal temperature of 165 °F).
- Warm chunky tomato sauce, if necessary.
- Serve four meatballs, ¾ cup hot whole-wheat spaghetti, ½ cup chunky tomato sauce, 1 teaspoon parmesan cheese, and a pinch of fresh basil per portion.
Notes
Tip: Older children can help make the meatballs. Make sure everyone washes their hands and sanitizes all utensils and surfaces with disinfectant after handling raw meat.
