Ingredients
- 1 smoked sausage
- 0.5 pound potatoes (peeled, diced)
- 0.25 pound carrots (peeled, diced)
- 0.25 yellow onion (diced)
- 0.5 cup chicken broth
- 1 tablespoon butter
- 2 tablespoon milk
- 0.25 teaspoon salt
- 0.13 teaspoon black pepper
Instructions
- Place diced potatoes, carrots, and yellow onion in a medium saucepan. Cover with chicken broth and enough water to fully submerge vegetables. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are very tender.
- While vegetables cook, slice the smoked sausage into 1/2-inch thick pieces. Heat a small non-stick skillet over medium heat. Add the sausage slices and cook for 3-5 minutes per side, until browned and heated through. Remove from skillet and set aside.
- Drain the cooked vegetables, reserving a small amount of cooking liquid if needed. Return vegetables to the saucepan. Add butter, milk, salt, and black pepper. Mash vigorously with a potato masher until smooth. If mixture is too dry, add a splash of the reserved cooking liquid.
- Spoon the Hutspot onto a plate and top with the pan-fried smoked sausage slices.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
