- 1 yellow onion (diced)
- 1 cup white rice (uncooked)
- 1 can diced tomatoes (with juices)
- 1 can canned corn (drained)
- 2 cup beef broth (low-sodium)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 1 cup cheddar cheese (shredded)
Instructions
- Preheat your oven to 375°F. Grease a 9x13-inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef and diced yellow onion for 6 minutes, breaking the meat apart until no longer pink (160°F). Drain any excess grease.
- Stir the garlic powder, smoked paprika, salt, and black pepper into the browned beef mixture in the skillet.
- In the prepared baking dish, combine the uncooked white rice, drained canned corn, diced tomatoes with juices, beef broth, and the seasoned beef mixture. Stir evenly and cover tightly with aluminum foil.
- Bake covered for 30 minutes until the rice is tender and has absorbed the liquid. Carefully remove the foil, scatter the shredded cheddar cheese across the top, and bake uncovered for 5 minutes until cheese is melted and bubbling.
