Tomato N' Cheese Pasta

Pasta and tomato sauce are topped with cheese and cooked in the oven. Double this recipe for a family of 4. Add a tossed salad for a hearty meal.

  1. Cook whole grain pasta according to package directions; drain.
  2. In a small saucepan, cook onion and garlic in olive oil until tender.
  3. Stir in diced tomatoes, basil, oregano, sugar, and black pepper.
  4. Bring to a boil.
  5. Reduce heat.
  6. Simmer uncovered for 15 minutes.
  7. Add whole grain pasta to sauce.
  8. Transfer to a greased 1-quart baking dish.
  9. Top with part-skim mozzarella and Parmesan cheese.
  10. Bake, uncovered at 375 °F for 10 to 15 minutes or until cheese is melted.
