Ingredients
- 1 cup whole grain pasta ((shell, penne, or ziti))
- 0.25 cup onion (chopped)
- 2 clove garlic (minced)
- 1 tablespoon olive oil
- 1 can diced tomatoes (14.5 ounces, un-salted)
- 0.5 teaspoon basil (fresh or dried)
- 0.5 teaspoon oregano
- 0.25 teaspoon sugar
- 0.25 teaspoon black pepper
- 0.25 cup part-skim mozzarella (shredded)
- 1 tablespoon Parmesan cheese (grated)
Instructions
- Cook whole grain pasta according to package directions; drain.
- In a small saucepan, cook onion and garlic in olive oil until tender.
- Stir in diced tomatoes, basil, oregano, sugar, and black pepper.
- Bring to a boil.
- Reduce heat.
- Simmer uncovered for 15 minutes.
- Add whole grain pasta to sauce.
- Transfer to a greased 1-quart baking dish.
- Top with part-skim mozzarella and Parmesan cheese.
- Bake, uncovered at 375 °F for 10 to 15 minutes or until cheese is melted.
