Tomato-Braised Sausage and Beans

  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add crumbled Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove sausage with a slotted spoon and set aside, leaving rendered fat in the pan.
  2. Add chopped yellow onion to the skillet and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in undrained diced tomatoes, rinsed cannellini beans, chicken broth, dried Italian seasoning, and red pepper flakes (if using). Bring to a simmer.
  4. Return cooked sausage to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, allowing flavors to meld and the sauce to thicken slightly. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  5. While the sausage and beans simmer, prepare the side salad by tossing mixed greens with balsamic vinaigrette.
  6. Serve the tomato-braised sausage and beans hot with slices of crusty bread for dipping and a side of mixed green salad.

Notes

This dish is also great with a sprinkle of grated Parmesan cheese before serving.
