Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage (casings removed and crumbled)
- 1 yellow onion (large, chopped)
- 3 clove garlic (minced)
- 1 can diced tomatoes (undrained)
- 1 can cannellini beans (rinsed and drained)
- 1.5 cup chicken broth
- 0.5 teaspoon dried Italian seasoning
- 0.25 teaspoon red pepper flakes
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 crusty bread (sliced, for serving)
- 5 ounce mixed greens
- 0.25 cup balsamic vinaigrette
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add crumbled Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove sausage with a slotted spoon and set aside, leaving rendered fat in the pan.
- Add chopped yellow onion to the skillet and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in undrained diced tomatoes, rinsed cannellini beans, chicken broth, dried Italian seasoning, and red pepper flakes (if using). Bring to a simmer.
- Return cooked sausage to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, allowing flavors to meld and the sauce to thicken slightly. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- While the sausage and beans simmer, prepare the side salad by tossing mixed greens with balsamic vinaigrette.
- Serve the tomato-braised sausage and beans hot with slices of crusty bread for dipping and a side of mixed green salad.
Notes
This dish is also great with a sprinkle of grated Parmesan cheese before serving.
