Tomato-Braised Beef Skillet

Tender strips of beef sirloin quickly braised in a rich garlic-herb tomato sauce, folded with baby spinach and served over buttery cauliflower mash.

  1. Season the beef sirloin strips with 1/2 teaspoon of the salt and 1/4 teaspoon of the black pepper.
  2. Heat the olive oil in a large deep skillet over medium-high heat. Add the beef strips in a single layer and sear for 3 minutes until browned on the exterior, then transfer to a plate.
  3. Reduce the heat to medium. Add the diced yellow onion and minced garlic to the skillet, cooking for 2 minutes until fragrant. Stir in the tomato paste and dried Italian seasoning, cooking for 1 minute.
  4. Pour in the beef broth, scraping up any browned bits from the pan bottom. Return the beef and its accumulated juices to the pan, bring to a gentle simmer, cover, and cook for 8 minutes until the beef is tender.
  5. Stir the fresh baby spinach into the skillet in batches until wilted into the sauce, about 2 minutes.
  6. Meanwhile, steam the riced cauliflower in a microwave-safe covered bowl for 4 minutes until tender. Drain any excess moisture, then mash with the unsalted butter and remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  7. Spoon the cauliflower mash into plates and ladle the saucy braised beef and spinach over top.

Notes

Reheats wonderfully; keep the beef and cauliflower mash in an airtight container for Thursday's dinner.
