Ingredients
- 1.5 pound chicken breast (boneless, skinless, cut into 1-inch cubes)
- 2 tablespoon olive oil
- 4 clove garlic (minced)
- 2 pint cherry tomatoes (halved)
- 0.5 cup chicken broth (low-sodium)
- 0.25 cup fresh basil (chopped)
- 1 teaspoon dried oregano
- 4 zucchinis (medium, spiralized into noodles)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Season chicken breast cubes with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breast and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the same skillet. Add the minced garlic and cook for 30 seconds until fragrant.
- Add the halved cherry tomatoes to the skillet with the dried oregano. Cook for 5-7 minutes, stirring occasionally and gently pressing some tomatoes to release juices, until they begin to burst and form a sauce.
- Stir in the low-sodium chicken broth and bring to a simmer. Return the cooked chicken to the skillet. Stir in the fresh basil.
- In a separate pan, or briefly in the same skillet before adding chicken back, quickly sauté the spiralized zucchini noodles for 2-3 minutes until tender-crisp. Alternatively, serve them raw under the sauce.
- Serve the chicken and tomato sauce immediately over the zucchini noodles. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper to taste.
Notes
To save time, use pre-spiralized zucchini noodles. Adjust red pepper flakes to control the spice level.
