Tomato-Basil Chicken Zucchini Noodles

  1. Season chicken breast cubes with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breast and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
  3. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the halved cherry tomatoes to the skillet with the dried oregano. Cook for 5-7 minutes, stirring occasionally and gently pressing some tomatoes to release juices, until they begin to burst and form a sauce.
  5. Stir in the low-sodium chicken broth and bring to a simmer. Return the cooked chicken to the skillet. Stir in the fresh basil.
  6. In a separate pan, or briefly in the same skillet before adding chicken back, quickly sauté the spiralized zucchini noodles for 2-3 minutes until tender-crisp. Alternatively, serve them raw under the sauce.
  7. Serve the chicken and tomato sauce immediately over the zucchini noodles. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper to taste.

Notes

To save time, use pre-spiralized zucchini noodles. Adjust red pepper flakes to control the spice level.
