Ingredients
- 30 ounce tofu (extra-firm, pressed, cubed, and pan-fried or baked (prepared in advance))
- 0.25 cup soy sauce (low sodium)
- 2 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon fresh ginger (grated)
- 1 head cauliflower (large, grated into 'rice')
- 0.5 English cucumber (diced)
- 1 carrot (shredded)
- 1 avocado (sliced)
- 1 cup shelled edamame (steamed and cooled)
- 2 tablespoon toasted sesame seeds
- 0.25 cup sriracha mayo (dairy-free optional)
Instructions
- If not already prepared, pan-fry or bake the cubed tofu until golden and slightly crispy. Let cool. This can be done in advance.
- In a medium bowl, whisk together the low sodium soy sauce, rice vinegar, sesame oil, and grated fresh ginger to create the marinade/dressing.
- Place the grated cauliflower 'rice' in a large bowl. Pour half of the prepared dressing over the cauliflower and toss gently to coat. This will be the base for your bowls.
- Assemble the bowls: Divide the dressed cauliflower rice among 4-5 bowls. Top with the cooked tofu, diced English cucumber, shredded carrot, sliced avocado, and shelled edamame.
- Drizzle the remaining dressing over the assembled bowls. Garnish with toasted sesame seeds and a drizzle of sriracha mayo, if using.
Notes
Tofu can be pan-fried or baked up to 2 days in advance for quicker assembly on the day of serving. If you prefer a warmer bowl, the cauliflower rice can be quickly steamed just before assembling.
