Instructions

  1. If not already prepared, pan-fry or bake the cubed tofu until golden and slightly crispy. Let cool. This can be done in advance.
  2. In a medium bowl, whisk together the low sodium soy sauce, rice vinegar, sesame oil, and grated fresh ginger to create the marinade/dressing.
  3. Place the grated cauliflower 'rice' in a large bowl. Pour half of the prepared dressing over the cauliflower and toss gently to coat. This will be the base for your bowls.
  4. Assemble the bowls: Divide the dressed cauliflower rice among 4-5 bowls. Top with the cooked tofu, diced English cucumber, shredded carrot, sliced avocado, and shelled edamame.
  5. Drizzle the remaining dressing over the assembled bowls. Garnish with toasted sesame seeds and a drizzle of sriracha mayo, if using.

Notes

Tofu can be pan-fried or baked up to 2 days in advance for quicker assembly on the day of serving. If you prefer a warmer bowl, the cauliflower rice can be quickly steamed just before assembling.
