- 2 tablespoon fajita seasoning (no cumin)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)

- 8 flour tortillas
- 0.25 cup fresh cilantro (chopped, for serving)
- 0.5 cup salsa (for serving)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 28 ounces tofu strips and 2 tablespoons fajita seasoning. Cook for 8-10 minutes, stirring occasionally, until tofu is browned and firm.
- Add 1 sliced red bell pepper, 1 sliced green bell pepper, and 1 sliced yellow onion to the skillet. Continue to cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
- While the skillet cooks, warm 8 small flour tortillas according to package directions.
- Serve the tofu and vegetable mixture immediately with warm flour tortillas, garnished with 1/4 cup chopped fresh cilantro and 1/2 cup salsa.
Notes
Pressing the tofu for at least 20-30 minutes beforehand helps remove excess water, leading to a firmer texture and better browning in the skillet. If short on time, you can press it by wrapping in paper towels and placing a heavy object on top.
