Ingredients
- 1.25 pound tilapia fillets
- 1 teaspoon salt (for rice)
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 1.5 cup white rice (uncooked)
- 1 can full-fat coconut milk (13.5-ounce)
- 1.5 cup water
- 1 pound fresh green beans (trimmed)
- 2 tablespoon fresh cilantro (chopped)
Instructions
- In a medium saucepan, combine white rice, full-fat coconut milk, water, and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until liquid is absorbed and rice is tender. Do not stir. Remove from heat and let sit, covered, for 5 minutes.
- While the rice cooks, season tilapia fillets with 1/2 teaspoon salt and black pepper.
- Heat olive oil in a large non-stick skillet over medium-high heat. Add tilapia fillets and cook for 3-4 minutes per side, or until fish is opaque and flakes easily with a fork.
- Meanwhile, steam the trimmed fresh green beans. You can do this by placing them in a steamer basket over simmering water for 5-7 minutes, until tender-crisp. Alternatively, microwave with a splash of water for 3-5 minutes.
- Fluff the coconut rice with a fork. Serve the pan-fried tilapia with coconut rice and steamed green beans. Garnish with fresh cilantro if desired.
Notes
Avoid overcooking the tilapia to keep it moist and flaky. For an extra touch of flavor, toast the uncooked rice lightly in the saucepan with a small amount of oil before adding the liquids.
