Ingredients
- 0.5 pound ground beef
- 1 cup onion (diced)
- 3 cup water
- 3 cup red potatoes (cubed)
- 2 tomatoes (diced)
- 1 can tomato sauce (no salt added)
- 0.5 cup frozen corn kernels
- 0.5 cup yellow squash (diced)
- 0.5 cup green squash (diced)
- 0.5 can kidney beans (low-sodium, drained)
- 0.5 can black beans (low-sodium)
- 0.25 cup quick cooking oats
- 2 clove garlic (finely chopped)
- 0.25 teaspoon black pepper
- 0.25 teaspoon salt
Instructions
- In a small skillet, brown ground beef and onions over medium to high heat for 8 to 10 minutes.
- Drain fat.
- In a large pot, combine cooked ground beef, water, and red potatoes.
- Bring the pot to a boil and cook for 15 minutes.
- Add tomatoes, tomato sauce, frozen corn kernels, yellow squash, green squash, kidney beans, black beans, quick cooking oats, garlic, black pepper, and salt to the pot and bring to a boil.
- Lower heat and simmer for about 25 minutes.
Notes
The recommended safe minimum internal temperature for ground beef is 160 °F, as measured with a food thermometer.
