Ingredients
- 1 pound ground beef
- 1 onion (diced)
- 1 bell pepper (green, diced)
- 1 jalapeno pepper (seeded and minced)
- 10 ounce Rotel Tomatoes and Green Chiles
- 16 ounce tomato sauce
- 2 tablespoon cumin
- 2 tablespoon chili powder
- 1 teaspoon salt
- 0.5 teaspoon cayenne pepper
- 0.5 teaspoon paprika
- 14 ounce kidney beans (rinsed and drained)
- 14 ounce black beans (rinsed and drained)
- 1 cup water
- 0.5 cup cheddar cheese (shredded, for topping)
- 1 avocado (for topping)
- 0.25 cup sour cream (for topping)
Instructions
- Cook ground beef, onion, jalapeño and green pepper in a large pot over medium-high heat until beef is cooked. Drain excess grease.
- Stir in diced tomatoes, tomato sauce, cumin, chili powder, salt, cayenne pepper and paprika. Bring to a boil.
- Reduce heat to low, add beans and water, then cover and let simmer for 1 hour.
- Serve hot and top with shredded cheddar cheese, avocado and sour cream.
