  1. Cook the brown rice: Combine 1 cup uncooked brown rice with 2 cups water and 1/4 teaspoon of salt in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until water is absorbed and rice is tender. Stir in 1/2 tablespoon sesame oil and 1 clove of minced garlic. Keep warm.
  2. Prepare the sauce: In a small bowl, whisk together the 1/4 cup tamari, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, and 1/4 cup chicken broth. If using, add 1 tablespoon sriracha. Set aside.
  3. Brown the turkey: Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the 1 pound lean ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess fat and set the turkey aside.
  4. Sauté aromatics: Add the remaining 1 tablespoon olive oil to the same skillet. Add the diced yellow onion, remaining 2 cloves of minced garlic, and grated fresh ginger. Sauté for 2-3 minutes until fragrant.
  5. Stir-fry vegetables: Add the thinly sliced red bell pepper, broccoli florets, and sliced carrots to the skillet. Stir-fry for 5-7 minutes, until vegetables are crisp-tender. Add the snow peas during the last 2 minutes of cooking.
  6. Combine and finish: Return the cooked ground turkey to the skillet with the vegetables. Pour the prepared sauce over everything. Stir well to coat and cook for 2-3 minutes, allowing the sauce to thicken slightly. Stir in the remaining 1/2 tablespoon sesame oil and 1/4 teaspoon salt. Taste and adjust seasoning as needed.
  7. Serve: Divide the garlic brown rice among two plates or bowls. Top with the Thai turkey stir-fry. Garnish with fresh cilantro, sesame seeds, and sliced green onions if desired. Serve immediately with lime wedges.

Notes

Adjust the level of sriracha to your preferred spice level. Leftovers store well in an airtight container for up to 3 days and can be reheated in a microwave or on the stovetop.
