Thai Pork and Basil Stir-Fry

Ingredients
- 1.5 pound pork tenderloin (thinly sliced)
- 2 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoon vegetable oil
- 6 clove garlic (minced)
- 2 tablespoon fresh ginger (grated)
- 2 red bell peppers (thinly sliced)
- 1 cup chicken broth
- 2 tablespoon brown sugar
- 1 tablespoon fish sauce
- 0.5 teaspoon red pepper flakes
- 1 cup fresh basil leaves (roughly chopped)
- 2 package pre-cooked jasmine rice
Instructions
- In a medium bowl, toss the thinly sliced pork tenderloin with 1 tablespoon of soy sauce and cornstarch. Set aside to marinate for 5 minutes while you prepare other ingredients.
- Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the pork and stir-fry for 3-5 minutes until browned and cooked through. Remove pork from the skillet and set aside.
- Add the minced garlic, grated fresh ginger, and thinly sliced red bell peppers to the same skillet. Stir-fry for 2-3 minutes until the peppers are tender-crisp.
- In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, chicken broth, brown sugar, fish sauce, and red pepper flakes.
- Pour the sauce mixture into the skillet and bring to a simmer, cooking for 1-2 minutes until slightly thickened. Return the cooked pork to the skillet along with the fresh basil leaves. Toss quickly to coat and wilt the basil.
- Serve immediately over heated pre-cooked jasmine rice.
Notes
Adjust red pepper flakes to desired spice level. For a richer flavor, you can add 1/4 cup chopped peanuts (add to the sauce, optional).
