Instructions

  1. In a medium bowl, toss the thinly sliced pork tenderloin with 1 tablespoon of soy sauce and cornstarch. Set aside to marinate for 5 minutes while you prepare other ingredients.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the pork and stir-fry for 3-5 minutes until browned and cooked through. Remove pork from the skillet and set aside.
  3. Add the minced garlic, grated fresh ginger, and thinly sliced red bell peppers to the same skillet. Stir-fry for 2-3 minutes until the peppers are tender-crisp.
  4. In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, chicken broth, brown sugar, fish sauce, and red pepper flakes.
  5. Pour the sauce mixture into the skillet and bring to a simmer, cooking for 1-2 minutes until slightly thickened. Return the cooked pork to the skillet along with the fresh basil leaves. Toss quickly to coat and wilt the basil.
  6. Serve immediately over heated pre-cooked jasmine rice.

Notes

Adjust red pepper flakes to desired spice level. For a richer flavor, you can add 1/4 cup chopped peanuts (add to the sauce, optional).
