  1. Heat olive oil in a large skillet over medium-high heat. Add ground chicken and red bell pepper. Cook, breaking up the chicken, until no pink remains and pepper is softened, about 5-7 minutes.
  2. Stir in minced garlic and grated fresh ginger. Cook for 1 minute until fragrant.
  3. In a small bowl, whisk together low-sodium soy sauce, lime juice, brown sugar, fish sauce, and red pepper flakes (if using). Pour over the chicken mixture in the skillet.
  4. Cook for 2-3 minutes, stirring, until the sauce thickens slightly and coats the chicken. Remove from heat and stir in chopped fresh cilantro.
  5. While the chicken cools slightly, prepare a quick side salad by tossing mixed greens, cherry tomatoes, and thinly sliced cucumber with vinaigrette dressing.
