Thai Coconut Curry Beef Soup

  1. Heat 1 tablespoon avocado oil in a large heavy soup pot over medium-high heat. Add 2 pounds ground beef and cook for 6 minutes, breaking apart with a wooden spoon until browned. Drain any excess fat.
  2. Push the meat to the sides of the pot and add 3 tablespoons Thai red curry paste, 1 tablespoon minced fresh ginger, and 4 minced cloves garlic to the center. Stir constantly for 1 minute until highly aromatic.
  3. Add 3 sliced medium carrots, 1 sliced red bell pepper, 6 cups beef broth, and 2 cans full-fat coconut milk. Stir thoroughly to incorporate the curry paste.
  4. Bring the soup to a simmer over medium heat. Reduce heat to medium-low and cook uncovered for 10 minutes, until carrots are tender.
  5. Stir in 2 tablespoons fish sauce and 5 ounces baby spinach, cooking for 1 minute until the spinach wilts into the broth.
  6. Remove from heat and stir in 2 tablespoons fresh lime juice and 1/2 cup chopped fresh cilantro before portioning.
