Thai Basil Shrimp Stir-Fry

  1. Cook white rice: Combine 1/2 cup uncooked white rice and 1 cup water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. While rice cooks, prepare the sauce: In a small bowl, whisk together low sodium soy sauce, 2 tablespoons water, and light brown sugar until sugar is dissolved. Set aside.
  3. Heat olive oil in a large skillet or wok over medium-high heat. Add minced garlic and bell pepper; stir-fry for 2-3 minutes until bell pepper starts to soften. Add trimmed green beans and continue to stir-fry for 2-3 minutes.
  4. Add shrimp to the skillet and stir-fry for 2-3 minutes until they just turn pink and opaque.
  5. Pour the sauce mixture over the shrimp and vegetables. Cook for 1 minute, stirring constantly, until the sauce slightly thickens.
  6. Remove from heat and stir in the fresh basil leaves.
  7. Serve immediately over fluffy white rice.

Notes

Adjust soy sauce to your preference for sodium content. Use low-sodium soy sauce to control overall sodium.
