Thai Basil Chicken with Zucchini Noodles

  1. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 1 tablespoon fish sauce, 1 tablespoon fresh lime juice, and 1 teaspoon erythritol or stevia (if using). Set aside.
  2. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 2 minced garlic cloves and 0.5 medium red bell pepper, thinly sliced, and stir-fry for 1-2 minutes until fragrant.
  3. Add 1 1/4 pounds boneless, skinless chicken breast, thinly sliced, to the skillet. Stir-fry for 4-6 minutes until the chicken is cooked through and lightly browned.
  4. Pour the prepared sauce over the chicken and vegetables. Add 1 cup fresh basil leaves and stir-fry for 1-2 minutes until the basil wilts and the sauce slightly thickens.
  5. While the chicken is stir-frying, steam or sauté the 3 medium spiralized zucchini noodles in a separate pan for 2-3 minutes until just tender. Do not overcook.
  6. Divide the zucchini noodles among three plates, then top with the Thai basil chicken. Garnish with 1 teaspoon sesame seeds if desired.

Notes

Use a mandoline or spiralizer for best results with zucchini noodles. If you don't have fresh basil, you can substitute 1-2 teaspoons of dried basil, though fresh is preferred.
