Thai Basil Chicken with Rice Noodles and Edamame

  1. Cook the brown rice noodles in a large pot of boiling water according to package directions (about 6 to 8 minutes). Drain, rinse with cold water, and set aside.
  2. Heat 1 tablespoon of garlic-infused olive oil in a large skillet or wok over medium-high heat. Add the chicken strips and 1/4 teaspoon salt. Stir-fry for 5 to 6 minutes until cooked through and internal temperature reaches 165°F. Transfer chicken to a plate.
  3. In the same skillet, heat the remaining 1 tablespoon garlic-infused olive oil. Add the sliced bell peppers, thawed edamame, and remaining 1/4 teaspoon salt. Sauté for 4 minutes until the vegetables are tender-crisp.
  4. Add the cooked chicken, drained brown rice noodles, gluten-free tamari, and lime juice to the skillet. Toss continuously for 2 minutes to blend flavors and warm the noodles.
  5. Remove skillet from heat, fold in the fresh Thai basil leaves until just wilted, and serve warm.

Notes

Shelled edamame is naturally high in fiber and protein while remaining gentle on digestion.
