Ingredients
- 2 pound chicken breast (boneless, skinless, diced into 1/2-inch pieces)
- 2 tablespoon avocado oil
- 4 clove garlic (minced)
- 1 tablespoon fresh ginger (minced)
- 1 serrano chili (seeded and thinly sliced)
- 3 tablespoon gluten-free tamari
- 1 tablespoon fish sauce
- 1 cup fresh basil (packed leaves)
- 1 pound green beans (trimmed)
- 6 cup riced cauliflower
- 0.5 teaspoon salt
Instructions
- Heat 1 tablespoon of the avocado oil in a large skillet or wok over medium-high heat. Add the trimmed green beans with 1/4 teaspoon of the salt, sautéing for 4 to 5 minutes until tender-crisp and blistered. Transfer the green beans to a plate.
- In the same skillet, heat the remaining 1 tablespoon of avocado oil over high heat. Add the minced garlic, minced ginger, and sliced serrano chili, cooking for 30 seconds until fragrant.
- Add the diced chicken breast to the skillet. Cook without moving for 2 minutes to get light browning, then stir and cook for 4 to 5 minutes until the chicken reaches an internal temperature of 165°F.
- Stir in the gluten-free tamari and fish sauce, scraping up any browned bits on the bottom of the pan. Remove the skillet from heat and gently fold in the fresh basil leaves until wilted.
- Place the riced cauliflower in a microwave-safe dish, season with the remaining 1/4 teaspoon of salt, cover loosely, and microwave on high for 4 minutes until tender and hot.
- Divide the warm cauliflower rice among plates, top with the savory chicken stir-fry, and serve alongside the blistered green beans.
