- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 pound lean ground beef
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 0.5 teaspoon onion powder
- 0.5 teaspoon garlic powder
- 1 cup beef broth (no-salt-added)
- 15 ounce black beans (rinsed and drained, no-salt-added)
- 0.5 cup fresh cilantro (chopped)
- 2 cup brown rice (cooked)
- 1 red bell pepper (medium, thinly sliced)
- 2 cup romaine lettuce (shredded)
- 1 tomato (diced)
- 1 lime (cut into wedges)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced yellow onion and cook for 3-4 minutes until softened. Stir in minced garlic and cook for another 1 minute.
- Add lean ground beef to the skillet, breaking it apart with a spoon. Cook for 6-8 minutes until browned. Drain any excess fat.
- Stir in ground cumin, smoked paprika, onion powder, and garlic powder. Cook for 1 minute until fragrant.
- Pour in no-salt-added beef broth and bring to a simmer. Stir in rinsed and drained black beans. Cook for 5-7 minutes, allowing the flavors to meld. Remove from heat and stir in 1/4 cup chopped fresh cilantro.
- To assemble the bowls, divide the cooked brown rice among four serving bowls. Top with the ground beef and black bean mixture.
- Arrange sliced red bell pepper, shredded romaine lettuce, and diced tomato around the beef mixture in each bowl.
- Garnish with remaining chopped fresh cilantro and serve with lime wedges for squeezing.
Notes
This recipe is great for meal prepping; simply store components separately and assemble when ready to eat. Reheat the beef and bean mixture before adding fresh vegetables.
