Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced yellow onion and cook for 3-4 minutes until softened. Stir in minced garlic and cook for another 1 minute.
  2. Add lean ground beef to the skillet, breaking it apart with a spoon. Cook for 6-8 minutes until browned. Drain any excess fat.
  3. Stir in ground cumin, smoked paprika, onion powder, and garlic powder. Cook for 1 minute until fragrant.
  4. Pour in no-salt-added beef broth and bring to a simmer. Stir in rinsed and drained black beans. Cook for 5-7 minutes, allowing the flavors to meld. Remove from heat and stir in 1/4 cup chopped fresh cilantro.
  5. To assemble the bowls, divide the cooked brown rice among four serving bowls. Top with the ground beef and black bean mixture.
  6. Arrange sliced red bell pepper, shredded romaine lettuce, and diced tomato around the beef mixture in each bowl.
  7. Garnish with remaining chopped fresh cilantro and serve with lime wedges for squeezing.

Notes

This recipe is great for meal prepping; simply store components separately and assemble when ready to eat. Reheat the beef and bean mixture before adding fresh vegetables.
