  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add yellow onion to the skillet and cook until softened, about 3 minutes. Stir in garlic, chili powder, ground cumin, kosher salt, and black pepper. Cook for 1 minute more, until fragrant.
  3. Stir in the rinsed and drained canned black beans, drained canned corn, and undrained canned diced tomatoes. Bring the mixture to a simmer and cook for 5-7 minutes, allowing the flavors to meld and sauce to thicken slightly.
  4. While the beef skillet simmers, prepare the microwaveable brown rice according to package instructions.
  5. Divide the microwaveable brown rice among serving bowls. Spoon the Tex-Mex Beef and Corn Skillet over the rice. Serve immediately with tortilla chips on the side for dipping.
