  1. In a small bowl, whisk together 3/4 cup soy sauce, 1/4 cup rice vinegar, 1/4 cup brown sugar, 1 tablespoon sesame oil, 1 teaspoon cornstarch, and 1/4 cup water until smooth. Set aside.
  2. Heat 2 tablespoons olive oil in a large skillet or wok over medium-high heat. Add 1 1/2 pounds ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add 4 cloves minced garlic and 1 tablespoon grated fresh ginger to the skillet with the beef. Cook for 1 minute more until fragrant.
  4. Stir in 20 ounces frozen mixed vegetables into the skillet. Cook for 3-5 minutes, stirring occasionally, until the vegetables are crisp-tender.
  5. Pour the prepared sauce over the beef and vegetables. Bring to a simmer, stirring constantly, until the sauce thickens, about 1-2 minutes.
  6. Meanwhile, prepare 2 packages microwaveable white rice according to package directions.
  7. Taste and season with optional salt and black pepper as needed.
  8. Serve the teriyaki beef and vegetable mixture immediately over the hot rice. Garnish with optional sliced green onions and sesame seeds, if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheat well in the microwave.
