Instructions
- Place cubed sweet potatoes in a large steamer basket set over boiling water, cover, and steam for 10 minutes until tender.
- Add rinsed cannellini beans and broccoli florets to the steamer basket with the sweet potatoes, cover, and steam an additional 4 minutes until broccoli is bright green and tender-crisp.
- Transfer steamed sweet potatoes and cannellini beans to a bowl, season with half of the salt and black pepper, and coarsely crush with a potato masher.
- Season chicken cutlets with chopped fresh tarragon, minced garlic, remaining salt, and remaining black pepper.
- Heat avocado oil in a large skillet over medium-high heat, then sear chicken cutlets for 4 to 5 minutes per side until golden brown and cooked through to 165°F.
- Drizzle fresh lemon juice over the cooked chicken and serve immediately alongside the crushed sweet potatoes and steamed broccoli.
