Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey (lean)
- 1 yellow onion (medium, chopped)
- 1 ounce taco seasoning
- 0.5 cup water
- 1 lime
- 4 plum tomatoes (diced)
- 0.25 cup red onion (chopped)
- 0.5 cup fresh cilantro (chopped)
- 8 corn tortillas (soft)
- 0.25 teaspoon salt
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and chopped yellow onion. Cook, breaking apart the turkey, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 3-5 minutes, until the sauce has thickened and the turkey is well-coated. Squeeze in juice from half a lime.
- While turkey cooks, prepare the fresh salsa: In a medium bowl, combine diced plum tomatoes, chopped red onion, and 1/4 cup chopped fresh cilantro. Squeeze in juice from the remaining half lime and season with salt. Toss gently.
- Warm the soft corn tortillas according to package directions (microwave, oven, or skillet).
- Serve the seasoned ground turkey in the warm tortillas, topped with the fresh salsa and the remaining 1/4 cup chopped fresh cilantro.
Notes
For a little extra crunch, you can quickly pan-fry the corn tortillas in a dry skillet before assembling the tacos.
