  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and chopped yellow onion. Cook, breaking apart the turkey, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  2. Stir in the taco seasoning and water. Bring to a simmer and cook for 3-5 minutes, until the sauce has thickened and the turkey is well-coated. Squeeze in juice from half a lime.
  3. While turkey cooks, prepare the fresh salsa: In a medium bowl, combine diced plum tomatoes, chopped red onion, and 1/4 cup chopped fresh cilantro. Squeeze in juice from the remaining half lime and season with salt. Toss gently.
  4. Warm the soft corn tortillas according to package directions (microwave, oven, or skillet).
  5. Serve the seasoned ground turkey in the warm tortillas, topped with the fresh salsa and the remaining 1/4 cup chopped fresh cilantro.

Notes

For a little extra crunch, you can quickly pan-fry the corn tortillas in a dry skillet before assembling the tacos.
