Ingredients
- 2 pound boneless pork shoulder (trimmed of excess fat)
- 1.25 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon garlic powder
- 0.5 cup water
- 18 ounce barbecue sauce
- 4 hamburger buns
- 1 package coleslaw mix
- 0.5 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
Instructions
- Rub the pork shoulder with salt, black pepper, and garlic powder. Place in a slow cooker and add 1/2 cup water.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is very tender and easily shreds with a fork.
- Once cooked, carefully remove the pork from the slow cooker and place it in a large bowl. Reserve about 1/2 cup of the cooking liquid.
- Shred the pork using two forks. Discard any fat. Pour the barbecue sauce over the shredded pork and add a splash or two of the reserved cooking liquid to reach your desired consistency. Stir well to combine.
- While the pork cooks, prepare the coleslaw: In a medium bowl, whisk together mayonnaise, apple cider vinegar, sugar, and salt. Add the coleslaw mix and toss to coat. Cover and refrigerate until serving.
- Serve the warm pulled pork on hamburger buns, with coleslaw on the side. For kids with sensory issues, serve the pork, buns, and coleslaw separately.
Notes
For a less sweet barbecue sauce, look for brands with lower sugar content. You can also make your own by mixing ketchup, apple cider vinegar, brown sugar, and spices to control the flavor.
