  1. In a medium saucepan, combine 1 cup of jasmine rice with 2 cups of the water and 1/4 teaspoon of the salt. Bring to a boil, cover tightly, reduce heat to low, and cook for 15 minutes until tender and water is absorbed.
  2. In a large soup pot, combine the remaining 4 cups of water, yellow onion, Roma tomatoes, and grated ginger. Bring to a boil over medium-high heat and simmer for 8 minutes until the tomatoes soften.
  3. Add the sliced daikon radish, tamarind concentrate, fish sauce, and remaining 1/4 teaspoon salt. Simmer over medium heat for 5 minutes until the radish is nearly tender.
  4. Gently nestle the cod fillet chunks and baby bok choy into the simmering broth. Cook gently over medium-low heat for 5 to 6 minutes until the fish is opaque, flakes easily with a fork, and reaches an internal temperature of 145°F.
  5. Ladle the hot tamarind broth, tender fish, and vegetables into wide bowls and serve warm alongside portions of steamed jasmine rice.
