  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced yellow onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.
  2. Add the ground beef to the skillet, breaking it apart with a spoon. Cook for 6-8 minutes until browned. Drain any excess fat.
  3. Stir in the chili powder, ground cumin, dried oregano, and cayenne pepper (if using). Cook for 1 minute, allowing the spices to toast. Pour in the chicken broth, season with salt and black pepper, and bring to a simmer. Cook for 2-3 minutes until the liquid has slightly reduced.
  4. While the beef cooks, prepare the cauliflower rice according to package directions, typically by microwaving for 5-7 minutes or sautéing in a separate pan.
  5. Divide the cooked cauliflower rice among five bowls. Top with the seasoned ground beef, mixed greens, sliced avocado, salsa, and fresh cilantro. Serve immediately.
