Swiss Croque Potato Stacks

  1. Preheat broiler to high with a rack about 6 inches from the heat. Line a baking sheet with parchment paper.
  2. Place thinly sliced red potatoes in a microwave-safe bowl with 2 tablespoons of water. Cover and microwave on high for 4-5 minutes, or until tender. Drain well.
  3. For the quick pickled onions, combine thinly sliced red onion, white wine vinegar, and sugar in a small microwave-safe bowl. Microwave on high for 30-45 seconds, just until hot. Stir and set aside to cool slightly.
  4. On the prepared baking sheet, arrange the cooked potato slices. Layer each slice with a piece of deli ham, then top with a slice of Swiss cheese. Sprinkle with salt and black pepper.
  5. Broil for 2-3 minutes, watching carefully, until the cheese is melted and bubbly and the ham is slightly crisped. Do not walk away, as it can burn quickly.
  6. Serve immediately with the quick pickled red onions and toasted baguette slices on the side. Garnish with fresh chives if desired.

Notes

Keep a close eye on the broiler as oven temperatures vary, and the cheese can go from perfectly melted to burnt in seconds. You can assemble these ahead of time and broil just before serving.
