- 5 package pre-cooked brown rice
- 10 ounce shredded cabbage and carrot mix
- 0.25 cup light mayonnaise
- 1 teaspoon sugar
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the yellow onion and green bell pepper and cook for 3-4 minutes until softened.
- Stir in the garlic and cook for 1 minute more until fragrant.
- Add the plant-based ground to the skillet, breaking it apart with a spoon. Cook for 5-7 minutes, stirring occasionally, until browned.
- Stir in the vegetable broth, black beans, tomato sauce, tomato paste, 2 tablespoons apple cider vinegar, brown sugar, smoked paprika, garlic powder, black pepper, and 1/2 teaspoon salt. Bring to a simmer, then reduce heat to medium-low and cook for 5 minutes, allowing the sauce to thicken slightly.
- While the sloppy joe mix simmers, prepare the quick coleslaw: In a medium bowl, combine the shredded cabbage and carrot mix, light mayonnaise, 1 tablespoon apple cider vinegar, and sugar. Stir well to combine.
- Heat the pre-cooked brown rice pouches according to package directions.
- To serve, divide the cooked brown rice among 5 bowls. Top with the warm sloppy joe mix and a generous portion of coleslaw. Serve immediately.
Notes
Leftovers of the sloppy joe mix and brown rice can be stored together in an airtight container for up to 3 days. Store the coleslaw separately and add fresh when reheating.
