  1. Heat 1 tablespoon olive oil in a deep oven-safe skillet over medium heat, then add the diced sweet potato and sauté for 5 minutes until starting to soften.
  2. Stir in the uncooked quinoa, rinsed black beans, frozen sweet corn, diced tomatoes with green chiles, vegetable broth, ground cumin, smoked paprika, and salt.
  3. Bring the mixture to a gentle boil, cover with a tight-fitting lid, reduce the heat to low, and simmer for 25 minutes until the sweet potatoes are tender and the quinoa has absorbed all the liquid.
  4. Remove the skillet from heat and let sit covered for 5 minutes. Divide between plates and top each portion with freshly diced avocado before serving.

Notes

Reheats wonderfully; store the diced avocado separately and add fresh when reheating.
